How do you know that green beans are already grown up?

First of all, by color. Old beans will no longer be as intense yellow or green (depending on what you buy). The bean color is paler. However, do not be guided only by the color of the bean, because it also depends on the variety. Old beans are also quite thick and long. Bean seeds that are more prominent under the skin are becoming more visible. If you break such a bean in half, then usually both parts will still remain joined with an already wooding sip.

We start cooking the green beans with careful preparation. Clean the green beans from the fibers, cut off the tips and wash thoroughly. Larger string bean pods can be cut in half.

Green beans can be cooked in two ways: traditionally in boiling water or steamed.

To cook 1 kg of string beans we need 4 liters of water, 1 teaspoon of salt and 1 teaspoon of sugar. The cleaned pods should be thrown into boiling water. We count the cooking time for string beans from boiling again.

Yellow beans are cooked for 5 to 15 minutes, while green beans for about 15-20 minutes. This time refers to the young string beans, the older we cook a little longer, checking its softness.

It’s good to know that steamed vegetables retain a more pronounced taste and aroma, and more nutritional value. We put the beans in the steamer or put them in a colander, which we place on a pot with boiling water. Steamed beans take about 10-20 minutes, depending on whether they are young.

How can the green and purple string beans not lose color?

Green and purple string beans stain when cooking. To prevent this, you can stop cooking as soon as you notice that the pods turn green. We try one pod, if it is cooked but firm and still has a beautiful green or purple color, then immediately pour hot water and cool the pods. They should be put in very cold water for 2 minutes, preferably in ice water. And it’s ready! In this way, we interrupt processes caused by heat treatment and the natural dyes contained in the vegetable will remain intact.
