Short theory of the American pancake. The famous cake made of pancakes, topped with maple syrup and sprinkled with fresh fruit is definitely different from the concept of a light breakfast. Well, this is not an accidental procedure, because in the USA you eat much heavier breakfasts than in Central Europe.

History of pancakes

Pancakes or pancakes, as you prefer, like most American dishes, have become a kind of symbol in cuisines around the world. They have their long history, which begins in France, from where “crepes” came to the USA along with the colonists, which are pancakes made on very thin crust. Interestingly, French “pies” have gained popularity among colonists of other European descent – English and Dutch. Over time, the recipe for “crepes” began to dream its American dream, the dough was loosened with yeast or soda, wheat flour metamorphosed into corn, and the French lightness of the pancake replaced heavy dough. The shape of the pancake has also changed over the years, all through special pans with cavities. Yes, the American pancake owes its loosened shape.

In the USA, pancakes went into serial production, which was dealt with by the IHOP network. First, one pancake house was established on the outskirts of Los Angeles, and then the rapid territorial expansion of the premises began throughout the United States.

How to make pancakes from scratch?

Dry ingredients:

  • 180 g wheat flour (gluten-free version: universal gluten-free flour)
  • 2 flat teaspoons of baking powder
  • 2 tbsp sugar
  • pinch of salt

Liquid ingredients:

  • 200 ml milk, room temperature
  • 30 g melted butter
  • 2 eggs (size M), room temperature

For frying:

  • clarified butter, coconut oil or rapeseed oil

To be served (to choose):

  • maple syrup, honey, powdered sugar, fresh fruit, jam, fruit sauce, vanilla, chocolate

Start pancakes preparation by melting butter – in liquid form it will be easier to combine them with other ingredients of the dough. In a bowl, mix milk and eggs, add butter and all dry ingredients to them. The mass is to be thick, uniform and free of lumps. We mix, we mix! There is also the second option, typically American, i.e. all ingredients are immediately placed in a blender and you do not strain your muscles.

If you care for sweeter American pancakes, this is the moment when you can add vanilla sugar to them.

How to make pancakes – the way

In a Teflon pan, melt butter and form pancakes. They should be about 10-15 cm. We fry them until bubbles appear on their surface. Then we turn them over. For this purpose, we use a wide wooden spatula or a special one used to turn the dishes in the pan.

Plump and delicate fritters will come out of the given pancakes recipe. An effective serving of pancakes is a cake, topped with syrup and decorated with fruit. Remember, however, that, as we mentioned at the beginning, American pancakes are not fit snacks. One piece weighs about 133 grams, which gives us 205 calories, 6 grams of protein, 9 grams of fat and 25 grams of carbohydrates. And there are sweet additions.
